Rogan josh is an aromatic lamb dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine. Rogan means "oil" in Persian, while josh means "heat, hot, boiling, or passionate". Rogan josh thus means cooked in oil at intense heat.
