Aubergine strips are deep fried with carrot match stick and spring onions served in a fragrant chilli sauce.


Aubergine (large) 1 number
Vegetable oil 1tbsp
Carrots 2 numbers
Spring onions 4 sprigs
Garlic (large) 2 cloves
Vegetable oil (deep frying) 250 ml
Chilli sauce 2 tsp
Soy sauce 1tbsp
Chinese wine 1tbsp


  1. Cut the aubergine into strips and deep fry in batches.
  2. In a wok heat 1tbsp of oil and fry the carrots match sticks.
  3. Add spring onions and garlic stir fried for mins.
  4. Add the chilli sauce, soy sauce and wine followed by the aubergine.
  5. Mix well and serve hot.
