Banana Pastries


Banana Pastries

Sweet  banana  filling  wrapped  in  dough  and  baked.

Dough

Flour 450gms
Lard 50 gms
Unsalted  butter 50 gms
Water 125 ml

Filling

Bananas (large) 2 number
Dried apricots (finely chopped) 75 gms
Nutmeg powder  1/2 tsp
Orange juice 1/2 tsp
Egg yolk (beaten) 1 number
Icing sugar  1 tsp

Method

  1. For the dough, sieve the flour in a bowl and knead with butter and lard to form crumbs. Gradually add water to form a soft dough. Chill in refrigerator for 30 mins.
  2. Mash bananas in a bowl and add apricots, nutmeg, orange juice and mix well.
  3. Cot the dough into 16 equql parts and roll into a 3 inch round.
  4. Spoon the banana mixture on one half of it and fold it into a semi-circle. Pinch the edges with a fork to seal it.
  5. Bake it in a preheated oven at 180 c for 25 mins until brown.
  6. Dust with icing sugar and serve with cream or ice - cream.
