Chicken Tagine

Chicken (Cut x 6) 1 Kg
Extra virgin olive oil 60 ml
Onion Cipollono 40g
Ginger Julienne 10 g
Garlic sliced thinly 10 g
Cumin seeds 5g
Saffron .2g
Salt To Taste
Black Pepper Crushed To Taste
Chicken Stock and water 300g
Picked Lemon 50 g
Olive picoline 40 g
Parsley Chopped 20 g


  1. Season the chicken with salt n pepper
  2. Heat oil on medium heat in tagine or sauce pan, pour the chicken pieces into it and stir till it becomes golden brown and keep aside in a pan
  3. Add the onion into the pan and stir till it becomes golden brown.
  4. Add the ginger and garlic and stir for a minute then add the saffron and cumin seed to it. 
  5. Return the chicken to the pan and add stock or water to it
  6. Adjust the seasoning by add salt and pepper.
  7. Cover the chicken and braise it on medium low heat and cook it for approximately half an hour till it get cooked
  8. At last add olive and pickled lemon wedges and parsley at last.
  9. Cook it for another 10 minutes till olive cooked
  10. Tagine is ready to be served.
