Potatoes Large |

Method
- Boil the potatoes on simmering point to par cook for approx 20 minutes.
- Drain it and keep it in oven (150' C/300' F) on very low heat to dry.
- Peel the Potatoes immediately and grate it.
- Heat the clarified butter on saute pan over medium heat.
- Layer the grated potatoes in a pan.
- Season it and saute till it fully cooked buy turning both side.
- Cook the potatoes until they are golden brown and form a cake and until golden crisp brown.
- Turn the cake out of the pan.
- Serve immediately hot.
