/ Aubergine in Chilli Sauce
Aubergine strips are deep fried with carrot match stick and spring onions served in a fragrant chilli sauce.
|Vegetable oil (deep frying)
- Cut the aubergine into strips and deep fry in batches.
- In a wok heat 1tbsp of oil and fry the carrots match sticks.
- Add spring onions and garlic stir fried for mins.
- Add the chilli sauce, soy sauce and wine followed by the aubergine.
- Mix well and serve hot.
