Ingredients

Whole Red Snapper (Slit and cleaned) 1 no
Scallions (finely Chopped) 60 g
Garlic (finely chopped) 20 g
Tomatoes (roughly chopped) 70 g
Fresh lemon (juice) 2 no
While wine 100ml
Salt to taste
Black pepper crushed to taste
Thyme fresh 1/2 Tablespoon
Mushroom Button (Sliced) 80 g
Peppercorn mixed 1/2 tablespoon
Margarine (low fat) 3 tablespoon

Method

  1. Preheat the oven at 375 degrees F.
  2. Take a roasting which can be fit of fish and apply the low fat margarine on it.
  3. Skewers the fish closed and keep in roasting
  4. Place the Mixed Peppercorns, Mushrooms , Scallions, garlic and thyme in the hollow space of Snapper
  5. Cover the fish with the freshly ground black pepper and place the remaining margarine on the top of the fish.
  6. Pour the wine over the Fish
  7. Bake in Oven for approx 30 minutes till it gets cooked. During baking keep on basting the fish every 10 minutes.
