Method
- Cook the pork in oil, do not brown it.
- Put onion, celery, carrots, peppers, cabbage and garlic and softened it.
- Add the tomato cancasse, stock, salt, pepper.
- Simmer about 30 minutes.
- Add the chickpeas, black-eyed peas, simmer more for 10 minutes.
- Adjust the seasoning and garnish with grated parmesan cheese individually.
