Tomatoes Large 800 g
Tomato Puree 150 g
Red wine 200 ml
Olive oil 30 ml
Onion Large (Finely minced) 150 g
Garlic (Finely minced) 8 g
Chicken Stock 500 g
Thyme 2 g (1 sprig)
Basil 2 g (6 basil leaves)
Bay leaf 1
Salt To Taste
Black Pepper Crushed To Taste


  1. Blanch the tomatoes, peel, deseed and chop roughly.
  2. Heat the oil in a pan, saute the onion for 5 minutes until translucent.
  3. 2. Add the garlic, after a minute add tomato puree to it and stir until rusty brown and has a sweet aroma.
  4. Add the tomatoes, basil, bay leaf, thyme and red wine to the pot. Cook it for half an hour.
  5. Remove the herbs from it and blend to a fine mixture.
  6. Adjust the seasoning and serve hot.
