Method
- Blanch the tomatoes, peel, deseed and chop roughly.
- Heat the oil in a pan, saute the onion for 5 minutes until translucent.
- 2. Add the garlic, after a minute add tomato puree to it and stir until rusty brown and has a sweet aroma.
- Add the tomatoes, basil, bay leaf, thyme and red wine to the pot. Cook it for half an hour.
- Remove the herbs from it and blend to a fine mixture.
- Adjust the seasoning and serve hot.
